Bivalve mollusks, including clam, are foods with high nutritional
value. Furthermore, some clams, such as hard clam (Meretrix
meretrix), contain peptides, proteins, enzymes, polysaccharides,
mineral, essential vitamins, essential amino acids, which are
considered to be responsible for their nutritional and medicinal
functions (Xie et al., 2012). The hard clam, Marcenaria mercenaria,
contains 91.8% moisture, 4.41% protein, 1.97% ash and 0.21% fat
and is rich in minerals, e.g. Ca (65 mg/100 g) and P (69 mg/100 g)
