The quantitation of iron and calcium were studied. The content of iron and calcium in Ivy gourd ,Chinese spinach and Chinese cabbage were measured by using atomic absorption spectrophotometry method. The result showed that the content of iron in ivy gourd 196.10 mg/kg and were Chinese spinach 147.49 mg/kg and Chinese cabbage 111.53 mg/kg, respectively. The calcium content were found in Chinese cabbage of calcium 11319.46 mg / kg, Chinese spinach 1294.67 mg/kg and Ivy gourd cannot be found in calcium. the analysis limits for the lower limit of content (LOD) of iron were 0.4423 ppm and 1.4747 ppm the calcium equals 0.6357 ppm and 2.1155 ppm respectively. For determining the percentage of recoveries were 99.96% of the iron with the calcium 99.44% which is considered acceptable standards.
