The broth experiment showed that the pH adjustment of the
100 mg/kg celery concentrate treatment (adjusted TSBYE + adjusted
100 mg/kg CJ) did not affect the antimicrobial impact of the unadjusted
treatment (TSBYE + 100 mg/kg CJ) on L. monocytogenes growth.
The same results were observed for the unadjusted and adjusted
100 mg/kg CJ treatments in the ham experiment. However, differences
in L. monocytogenes growth between the 100 mg/kg conventional
sodium nitrite and both of the 100 mg/kg celery concentrate treatments suggest that celery concentrate, as a source of nitrite, may be
less effective than conventional nitrite at 100 mg/kg nitrite concentration
