The surimi (= 20 g) was mixed with 10 volumes of buffer A (100 mM NaCl +1 mM EDTA +20 mM phosphate buffer, pH 7 ) using a dis-persator.
The homogenate was centrifuged at 3000 rpm for 15 min
at 4 °C. Then, the precipitate was resuspended in 5 volumes of
buffer A and centrifuged under the same conditions.
