Many food processes involve harsh or difficult environmental conditions. Thus the selection and development of new sensors for the food industry should consider these situations. Sensors should be properly sealed to withstand harsh conditions and repeated washings. Sensors should be free from crevices from which food material cannot be removed easily during washing. Sensors should be immune to shock and vibration when installed on equipment.
