found a high
water to protein ratio in Hampshires and in their crosses, which
was also found in the present study. The highest water to protein
ratio was in the loin of SH where the ratio was 6.9% higher than in
NDL, 5.6% higher than in NL and 4.6% higher than in FL (Table 2).
The water content in NDL was low which may indicate a higher intramuscular
fat content in the loin.
