One comparison milk product was fermented with two
strains of S. thermophilus (~ 1 × 107 CFU/mL) and two strains of Lb. acidophilus
(~ 2 × 107 CFU/mL), and the other was fermented with two strains of S. thermo-
philus (~ 8 × 108 CFU/mL) and one strain of Lb. rhamnosus (~ 2 × 108 CFU/mL).
The protocol involved, besides lipid level evaluation, the determination of fibrinogen
and C-reactive protein because these two acute-phase proteins are also implicated
as risk factors for coronary artery disease in healthy men.56,57
