It had been indicated that many mushrooms could be cultivated on the starch rich materials in either submerged culture or in solidstate systems (Lichifield, 1967; Pandey et al., 2000). Recent studies
have shown that cereals were superior medium for filamentous fungi to carry out solid-state fermentation (SSF), and nutrients of the cereals would be enhanced after being fermented by edible mushrooms (Han, 2003; Han et al., 2005; Zhang et al., 2010). However, studies on SSF of ABM on amylaceous cereals, such as wheat, rice, oat, corn, millet, broomcorn millet and sorghum, have not been reported.
