Water was the predominant component in all products, accounting for more than 50% w.b. Canned ham (PKCH) had the highest water content (approx. 76.5%) and the lowest fat content (approx. 2.6%), ‘Krakowska’ sausage (PKKS) had the highest content of the protein þ others fraction (approx. 30.1%) and the lowest water content (approx. 54.7%), whereas ‘Podwawelska’ sausage (PKPS) had the highest fat content (approx. 19.9%) and the lowest content of the protein þ others fraction.
