A narrow change in antioxidant activity with a significant increase in lycopene content during ripening of tomatoes was also found by Javanmardiand Kubota (2006). It is interesting to note that the relationship between lycopene and antioxidant activity is not always direct lyproportional. The increase of lycopene content does not necessarily result in an increased antioxidant activity. In certain cases,an inverse relationship between antioxidant activity and lycopene content of red-tomato varieties was observed at the end of ripen-ing stage (Kotíková et al., 2011). The test on single antioxidantindicated that an increase in pure lycopene concentrations beyondcritical levels could reduce scavenging capacity values (Kotíková et al., 2011; Liu et al., 2008).
