To
our knowledge, regarding to the antioxidant activity, similar studies in red pepper are not available in the literature. However, a
first-order kinetics could be expected for ABTS, DPPH and FRAP, taking into account that carotenoids and ascorbic acid – which are the
main antioxidant species found in the extract used for the above
mentioned assays (Mínguez-Mosquera and Hornero-Méndez,
1993) – possess a first-order kinetics.
