The color of the coconut water was determined using a portable colorimeter (Chroma Meter CR400, Minolta, Japan) measuring the L*a*b* color space (CIE, 1986) in reflectance mode. The colorimeter was calibrated using the illuminant D65, and measurements were made through a 10-mm optical path. Chroma (C) and hue angle (h) were calculated from numerical values of L* (lightness), a*(redness) and b* (yellowness) according to Eqs. (1) and (2),
