Effect of preparation method on calcium content
Moisture content in calcium fortified rice prepared using soaking
and spraying methods was in the range of 8.16 ± 0.004 to
8.62 ± 0.02% and 8.12 ± 0.09 to 8.52 ± 0.15% (w.b.), respectively.
Effect of soaking and spraying methods and tempering time on
calcium content is shown in Fig. 1a and b. Calcium content in calcium
fortified rice premix prepared following soaking method
varied from 993 to 2239 mg per 100 g of rice premix with
maximum in premix prepared using soaking in the calcium solution
having 120 mg calcium per mL. Calcium content in calcium
fortified rice premix prepared following spraying method varied
from 1184 to 2539 mg/100g premix, which was increased with
increasing tempering time from 90 min to 150 min. Calcium content
was found significantly increased with increasing level of
calcium content in soaking/spraying solution, soaking or tempering
