The chemical composition of extracted pectins is shown in
Table 2. The uronic acid contents (AUA) of Ac, Ga, Ne and To were
47.71; 47.05; 61.32 and 68.51%, respectively (on a dry-weight
basis). Only the extract from To could legally be labeled as pectin
(>65% GalA), 1981), however these values were close to those
observed from apple pomace pectin (53–75%)
