From the color data above, the TCD values (DE) of the indicators for kimchi packaging during storage at 0±20°C were calculated and depicted in Fig. 4. The TCD value also changed continuously and consistently with the response of the indicators. The BP type indicator
gradually increased in TCD values with time, whereas TCD of the MR type increased remarkably and then remained constant. The final TCD values (27±33) of the BP type indicator were about twice as much as those (14±15) of MR type. It is generally known that TCD values more than 5.0 can be easily detected by human eyes and TCD more than 12.0 may imply absolutely different color spaces .
