What are BeaverTails®?
BeaverTails have been referred to as a Canadian culinary icon. These
deliciously addictive, traditional whole-wheat pastries are stretched by
hand to resemble the tail of a beaver, one of Canada’s best-known national
symbols. The pastries are then float cooked on high quality canola oil and
served piping hot, topped with butter and a choice of delectable flavours.
History
• The modern pastry known as a “BeaverTail” evolved from a recipe passed down within Grant
Hooker’s family for at least 3 generations and is similar to a yeasted, cracked wheat baking-day
treat prepared on early Canadian and American farms.
• BeaverTails were first served commercially by Pam and Grant Hooker’s family in 1978.
• The first permanent BeaverTails store was hand-built by Grant Hooker and opened in Ottawa’s
ByWard Market on June 2, 1980.
• In February 1981, the Hookers embraced a major development opportunity by serving their first
BeaverTail on Ottawa’s 7.8-km Rideau Canal Skateway, the “World’s Largest Skating Rink”
(Guiness Book of Records). Some 30 years later, skating leisurely through the downtown core of
Canada’s capital has become synonymous with enjoying BeaverTails.
• In 1988, BeaverTails opened its first venture outside the National Capital Region at La Ronde Six
Flags theme park in Montreal. There are now 3 BeaverTails operations at La Ronde, generating
food-service sales second only to the park’s McDonald’s restaurant.
• BeaverTails have since spread across Canada and are moving around the world. Having a
BeaverTail has become a tradition for locals and tourists alike when visiting Whistler, Mont-
Tremblant, Grouse Mountain in Vancouver, the Halifax Waterfront and the streets of Old Quebec
City, to name just a few of the company’s Canadian landmark sites.

• Since 1981, more than 8,000 young Canadians have worked for the BeaverTails operations in the
nation’s capital alone.
