The highest product yield was determined in whey protein
concentrate (54.65 g/100 g feed dm) and gum Arabic (46.63 g/100 g
feed dm). To our best knowledge, there are no comparative results
on probiotic microcapsules. However, a previous study on different
core materials showed that whey protein and gum Arabic combination
(3/1) provided the highest product yield (Bustos-Garza,
Yanez-Fernandez, & Barragan-Huerta, 2013).
