In dynamic market economies, the development of new products is an essential factor for the survival of companies, especially in the food industry, which often needs to launch new products in order to remain at the forefront of an increasingly aggressive market. The current expectations of consumers regarding novelties in the food area, coupled with loyalty to traditional brands, make the food market even more competitive (Damiani et al. 2012a). In this respect, exotic fruit processing, still scarcely exploited economically, should be considered by the food industry for the development of new products as it could attract new customers in search of flavors and smells not contained in traditional products.
