2. Materials and Methods
2.1. Raw Materials
All the raw materials for making ladoo, which includes
whole wheat flour, hydrogenated fat, powdered sugar,
cashew nut and desiccated coconut powder were procured
from local market, VCM was obtained from Central
Plantation Crops Research Institute (CPCRI), Kasaragod,
Kerala, India. Analytical grade potassium sorbate
was obtained from M/s Loba Chemie Co. Mumbai, India.
