Papaya (Carica papaya L.), belonging to the family Caricaceae, israpidly becoming an important fruit internationally, both as freshand processed products (Paull et al., 1997). The fruit is climac-teric and susceptible to postharvest losses due to ethylene-inducedripening. Currently, there is a high level of interest in postharvestapplications of ozone for decay control and as a potential sani-tizer against human pathogens. Ozone has been affirmed ‘GenerallyRecognized As Safe’ (GRAS) status as a food processing aid and iscompliant with the Environmental Protection Agency Disinfectionby Products Rule (US-FDA, 1997).
