2.7. Colour
The internal colour of cooked breakfast sausages was measured
using a CIE LAB systemwith a dual beam xenon flash spectrophotometer
(UltraScan XE, Hunterlab). Five measurements for each of five replicates
(diameter = 2.8 cm; height = 2 cm) were taken for each treatment.
CIE L (lightness), a (redness/greenness) and b (yellowness/blueness)
values were recorded. Before colour measurement the UltraScan XE was
calibrated using a black and white tile. D65 was the chosen illuminant
as it represents daylight.
