Good to hear from you. Unfortunately I am just about to head off to West Africa for three weeks so fitting in a demo now is not going to be easy.
However I can give you quite a bit of documentation.
First for the back end: The inventory system mainly involved two tables - a Lot table and a Transaction table which are described here:

There are some tables for storing label information which are not used in BMS, and LeafNode added another table ims_stock_transaction for which I have not seen any documentation - I have no idea what it does.
Next, We assessed that there are two categories of functionality required for a good breeder inventory management system. Firstly functionality which is embedded in the list manager, the nursery manager and the trial manager which allows breeders to add inventory, reserve inventory and produce labels in conjunction with their nursery and trail activities. Secondly there is a suite of functionality required by a store manager to facilitate, packing shipping, moving, discarding, reporting and things like that. We have only paid attention to the embedded functionality and have not started at all on the non-embedded Inventory Management Module.
