However, the values were increased in the prebiotic- and
synbiotic-treated groups (P < 0.05) Fat and sugar percent
of ice cream contribute to overrun, and it may be the reason
for this difference (Ayaz Javed and Nadeem 2011).
This
was not in agreement with Akin et al. (2007) who found
that the addition of inulin had no significant effect on overrun
values of the samples.
