Kheadr et al. (2002) described that homogenisation (200 MPa for five 1-min cycles) of milk significantly increased Cheddar cheese moisture content, attributing the results to precipitation or association of whey proteins with caseins or to a reduction in the syneresis due to changes in the structure of cheeses.
