2.5. Texture Profile Analysis
Textural analysis of young corn ear chiffon cake was performed instrumentally by TX.XTPlus Texture Analyser (Stable Micro Systems Ltd., Surrey, UK) which was provided with Exponent texture analysis software package. The crumbs of the cake were cut into 2.5 cm sided cubes for evaluation. Probe 75 mm aluminium plate (P/75) was used for compression. The test was carried out under the following condition, test speed 1 mms-1, strain 50%, double cycles, 5 sec interval between cycles and trigger force 5 g. From the analysis ,hardness, springiness, cohesiveness and resilience of the chiffon cake were acquired.
