Metal levels
The concentrations of different metals (Hg, Cd and Pb) (lg g1
wet weight) in the edible portion of fish, cephalopod molluscs
and crustaceans are given in Table 2. The concentrations of mercury
varied widely among the different organisms in the order
fish > cephalopod molluscs > crustaceans. A comparison of the levels
of this metal in fish revealed the highest mean concentrations in
