The TPC values varied from 79±4mg GA at
(60 ◦C/30 MPa) to 153±1mg GA (at 60 ◦C/10 MPa). For the pressure
effect it was detected at 40 ◦C an increase in TPC with enhancement
in pressure, while at 60 ◦C the TPC decreased with temperature. The
ANOVA data indicate significant difference among all TPC values.
The temperature effect show an increase in TPC from 40 to 60 ◦C
at 10 and at 20 MPa, while at 30MPa the TPC reaches a maximum
at 50 ◦C, although no significant difference was detected between
50 ◦C/10MPa and 60 ◦C/10 MPa. The antioxidant activity of the phenolic
fractions can be related to TPC values considering that the
class of phenolic compounds is well known as to present antioxidant
activity [13,18,21,27].
