So far, different Aronia products as commercial extracts evaluated
by Naruszewicz, Laniewska, Millo, and Dluzniewski ,
and as juice concentrates characterised by Bermudez-Soto et al.
have been described. However, until now data on Aronia
powders obtained by different drying techniques have been insufficient.
Thus, the aim of the present study was to assess different
drying methods on the basis of the content of bioactive compounds
in Aronia powders. For further characterisation of the powders,
antioxidant capacity of products obtained was examined.
