We have demonstrated that coating affected the physicalqualities and bioactive components of rice coated with PCC.High temperatures caused undesirable physical qualities andlower amounts of bioactive components as well as antioxidantactivities. In addition, spraying time at constant temperatureseemed to have less effect on those values than the formerexcept for the chroma value which was found to increasewith increasing spraying time. This implies that more PCCwas absorbed on the rice surface. Our findings have sup-ported the results of previous studies that anthocyanins weresusceptible to thermal processing. Therefore, to obtain morebioactive compounds and to increase the biological activitiesof the PCC-coated rice, we recommend the use of low temper-ature coating conditions with longer spraying times. However,besides the coating parameters studied, the concentration ofcoating materials and the nature of the core materials (ricevariety) should be further investigated.
