In the present work we investigated the stability of almond proteins during simulated in vivo digestion and the effect of food matrix on protein release in the upper GI tract. In addition, persistence of immunoreactive polypeptides generated during simulated in vivo digestion was assessed using rabbit poly- clonal antibodies (pAb) raised against a soluble almond protein extract and using two anti-prunin murine monoclonal antibodies (mAbs).
