In addition to anthocyanins, small quantities of flavone and flavonol
glycosides were detected (189 lg/g) (Table 1). Total amounts
of these compounds are approximately 10% of that of total anthocyanins.
The detected compounds were apigenin-6/8-C-pentoside-
8/6-C-hexoside (44% of total) > quercetin-3-O-glucoside
(29%) > quercetin-3-O-rutinoside (16%) > luteolin-6/8-C-arabinosyl-
6/8-C-glucoside (8%) > isorhamnetin-3-O-glucoside (3%). It is
noteworthy that the comparison with literature is difficult since
previous studies have concentrated almost exclusively on anthocyanins
with only one report on the flavonol and flavone glycoside
content of extracts of bran of different varieties of black rice (Sriseadka
et al., 2012).
