In sets of experiments, fresh guava was fixed into middle of vessel with PET plastic ring and the ohmic heating vessel was filled with varied NaCl solution concentration with 1.4 l. The electrodes were installed between the PET plastic rings. The optimum voltage from first stage experiment was used to treat whole fresh guava was through the electrodes and NaCl solution by using alternating current AC from slide up transformer. The whole fresh guava was treated electrically till the temperature to 50ํc. The percentages of treated guava juice extracted from mechanical extractor were investigated. The sensory characteristics (taste,flavor,texture and overall acceptance) of treated guava juice followed by prefer ability of 30 panelists (9-point hedonic scale scoring test)
