Proton NMR also
showed two major components: triacylglycerols and rice bran wax.
The comparison between the NMR peak areas of triacylglycerols
and wax indicated slightly higher wax levels in spreads 1 and 3,
which are consistent with the DSC results. It is believed that the
shorter incubation time for spreads 1 and 3 results in the relatively
higher level of wax due to the faster crystallization rate of wax than
triacylglycerols.
