The structure of
polysaccharide is relatively simple, comprising of
homo polysaccharides (Polymer containing one
type of sugar) or hetropolysaccharides (containing
more than two types of monosaccharide units).
These extracellular materials (polysaccharides,
Lipids, glycoproteins and lipopolysaccharides) can
be used as stabilizers, gelling agents, adhesives,
thickening agents, emulsifying agents, flocculants
and flushing agents (Becker et al., 1998)
