Excellent functional properties: MPCs are also highly functional ingredients. Incorporation of MPC in food and beverage formulations can provide a range of benefits, such as water binding, viscosity, gelling, foaming/ whipping, emulsification, and heat stability (Ye 2011; Huppertz and Patel 2012). In addition, MPCs in formulations can provide opacity and a pleasant milk flavor profile. Considering their excellent functional properties, MPC may be suitable for many applications in the food industry (Table 4).
