3.3.1. General appearance and microstructure evaluation of coated apples
Apples were coated with pullulan solution containing 12% SBE. The
surface of the apples coated with the control pullulan coating was glossy
and flavorless, the apples coated with SBE containing pullulan coating
were in turn more matt and of a delicate sweet basil flavor which
went well with apple flavor. A fragment of the surface and cross section
