Fig. 2 shows the survival of free and microencapsulated Bifido-
bacterium Bb-12 by spray drying with whey in different concentra- tions of bile. The viability of the microencapsulated Bifidobacterium in 0.5% bile decreased 1.71 ± 0.65 log after 6 h and 2.63 ± 0.32 log c- fu/g after 24 h of incubation. When exposed to 1% bile, the micro- capsules showed decreases of 2.71 ± 0.51 and of 4.13 ± 0.26 log after 6 h and 24 h, respectively. The free cells did not show any de- crease (p > 0.05) in viability at these concentrations of bile. Similar results were obtained by Li et al. (2011), who noted decreases from 0.77 to 2 log in 0.5% bile and from 1.27 to 3 log in 1% bile after 6 h of incubation of L. casei microcapsules.
Sultana et al. (2000) concluded that microencapsulation in algi- nate and starch did not improve the survival of probiotics in bile. After 6 h of incubation in 2% bile, there was a decrease of about 2 log in the counts of L. acidophilus and L. casei, whereas B. infantis showed only a slight decrease under these conditions. Trindade and Grosso (2000) also reported that microcapsules of B. bifidum and of L. acidophilus obtained with alginate did not protect cells in 2% and in 4% bile concentrations. Guerin et al. (2003) noted de- creases from 2 to 7 log in the viability of B. bifidum microencapsu-
lated with alginate, pectin and whey protein when exposed to 2% and to 4% bile concentrations after 1 and 3 h.
Mandal et al. (2006) reported that the survival of alginate- microencapsulated L. casei in bile depended on the concentration
of the encapsulating agent. Moreover, according to Sohail et al. (2011), the survival of probiotics is highly dependent on the spe- cies that is being microencapsulated. A comparison between the results of this present study to those of other similar studies shows
that the survival of the Bifidobacterium Bb-12 microcapsules in bile is satisfactory. Moreover, despite microencapsulation with whey failing to protect probiotic cells, the viability of the microcapsules remained >6 log cfu/g even after 24 h of incubation at the highest bile concentration studied in this present work.
