Secondary or preventive antioxidants such as thiodipropionic acid and dilauryl
thiodipropionate function by decomposing the lipid peroxides into stable end products.
Dilauryl thiodipropionate is also effective in inactivating peracids in model systems that
contain performic acid and nonanal, ethyl oleate, or cholesterol. In this system dilauryl
thiodipropionate is preferentially oxidized to the sulfoxide and prevents the formation of
nonanoic acid, 9-epoxyethyl oleate, and 5,6-epoxy-cholesterol, respectively.
