The whole soybeans (starting material for the soaking assays) showed the following contents of different isoflavone forms: 524.7 2.8 mg of b-glucosides g1 (223.1 0.9 mg of daidzin g1, 34.3 2.6 mg of glycitin g1, and 267.3 0.6 mg of genistin g1), 1640.7 5.0 mg of malonylglucosides g1 (575.4 1.8 mg of malonyldaidzin g1, 175.5 4.4 mg of malonylglycitin g1, and 889.8 1.4 mg of malonylgenistin), and 81.4 3.4 mg of aglycones g1 (43.5 3.3 mg of daidzein g1 and 37.9 1.1 mg of genistein g1).
