High pressure processing
An ultra-high pressure pilot plant (Model UHPF, 3.5L capacity, capable
of 800–1000MPa, Baotou Hi-tech Food Machinery Ltd., China) was
used for high pressure processing (HPP). The time to achieve 200MPa
was 3min; therefore heating timeof the 0.1MPa treatmentswas adjusted
accordingly. The pressure chamber temperature was adjusted to
70 °C with circulating water from a water bath. Up to three meat samples
onlywere treated at a time in order to ensure uniformtemperature
treatment. The temperature of the chamber was validated by a remote
sensing cell-type thermometer placed in an in-house designed aluminum
alloy crucible which successfully withstood high pressure.
