I make all of my cakes with fresh range organic eggs, fairtrade sugar, cocoa and chocolate and always with organic, unsalted butter. All flavourings are natural, whether it be natural fruit juices or Madagascar vanilla extract. Rich fruit cakes have fruit soaked in Courvoisier brandy and I like to make them at least 3 months before a celebration - this gives me enough time to ensure that a weekly pouring of yet more brandy makes them deliciously moist! Gluten free products are also a speciality.
