Inocula of E. coli and enterococci were isolated from environmental
samples of the factory and kept in nutrient agar (Oxiod,
Basingstoke, England). Before used one loop of each microorganism
was inoculated and cultivated at 37 C in nutrient broth (Oxoid) for
24 h. Each contained approximately 1 106 CFU/ml. To inoculate
each bacterial group onto the surfaces of zone 1, a 100 g piece of
chicken meat product was applied onto the surface to simulate
actual production conditions and then each bacterial inoculum
was sprayed separately onto the surface (approximately 20 cm
25 cm) of four sets of transfer conveyors, and left to dry for
15 min. The first set of conveyors was used to enumerate bacterial
inoculum on the surface before they were cleaned and sanitized.
