Geoduck has semi-annual flavor peaks around spawning in March and October. Growing tastier as their roe swells, they have crunchy texture, distinctive fragrance and intense sweetness. As time passes after harvesting however these characteristics take a dramatic turn for the worse; the flesh slacking, fragrance turning to odor, and all trace of sweet flavor vanishing. Thus when it comes to geoduck, freshness is all. Light drilling further highlights the element of sweetness amid the fragrance. Recent years have seen a precipitous decline in geoduck harvests, making this odd-looking mollusk a luxury to rival abalone and blood cockle.
