Thai spice uses roots of herbs like lemon grass, galangal, tumeric (saffron colored ginger), herbal leaves like thai basil, mint, with tamarind/lemon juice for its sour taste and coconut milk for its creamy taste. Indian spice uses seeds of herbs like cumin, fenugreek, cardomon, cinammon (bark) etc with milk, sour milk even yogurt for its curry taste ande curry leaves like bay leave or karupulei (another very fragrant indian curry leave). Indians seldom use noodles in their dish like thai food, indian food has different bread or roti more. Rice is the staple for both cuisine. The taste in Thai and Indian food is totally different where thai food is spicier than indian food.
