Air cell homogeneity and softness exhibited higher scores in cupcakes prepared from smaller sized rice flour, but hardness and chewiness showed reverse trends. Particle size distributions of rice flours affected the structure of crumbs in appearance, hardness and softness in texture, and overall quality of cupcake. It is suggested that rice flour (HP-120, or HP-160) was appropriate to make cake-type bakery products
