The development of browning is non-homogenous. Especially in
banana, colour changes and black spots develop at the same time.
Image analysis can be used to analyse the entire surface of a sample
and therefore can be used to represent the colour information
of a sample. This study showed that the G and CIE L⁄a⁄b⁄ values
estimated using image analysis are suitable for the analysis of
banana browning.
