In Haiti, post-harvest processing and storage
of maize and peanuts differ. Peanut producers typically store
peanuts in nylon or natural fiber sacks on earthen or concrete floor
indoors. Though peanut processers remove kernels with visible
mold from snacking peanuts, sorting is uncommon prior to peanut
butter production. In contrast, maize farmers dry and store whole
ears with husks in trees for up to 6 months at a time, a practice that
occurs in many lesser-developed countries (Udoh, Cardwell, &
Ikotun, 2000)
