After subjecting instrumental data to cluster analysis it is evident that REF muffins and the products which contained inulin and polydextrose as sucrose replacer appear as a separated group,
as do muffins where sucrose had been partially replaced by Stevia and FA or WB (Fig. 3). This is in line with PCA of instrumental raw data, which resulted in a similar grouping of the muffins (Fig. S3). REF, PD and IF separate mainly because of diameter and volume (see Table 4), and FA and WB separate mainly because of a lower hue angle (a* is positive, see Fig. 1).
