The scanning electron microscope photographs of two banana chips (Fig. 2), control and combination of CaCl2 and pectin treatments, were compared. The control sample showed extensive cell separation and ruptured cells due to migration of water, and large void spaces including middle lamella and cellwall damage (Fig. 2A1 and A2). In contrast, samples coated with 0.5 g CaCl2/100 ml distilled water and 1 g pectin/100 ml distilled water showed reduction in cell size and improved cellular integrity (Fig. 2B1 and B2). Besides, there was no disruption of cell wall or delamination of the middle lamella.
