Prior to participating, the volunteers were provided with details of the project,
the requirements of the test and a full ingredients listing of the
products to be consumed. All participants signed a consent form
prior to participation. Participants were advised to maintain their
normal diet whilst avoiding consumption of alcohol and carrying
out heavy physical activities in the 12 h prior to each test. The
inclusion criteria were as follows: normoglycemia (lower than
6.1 mmol/l), not being on a diet and not being allergic to any of
ingredients contained within the extruded products (buckwheat
and JA). None of the participants had a family history of diabetes
or glucose intolerance, used of any medicine that affects glycaemia
and had no chronic diseases
